Gallant soldier
Gallant soldier (Galinsoga parviflora): Its glabrous, erect stem grows pointed, ovate, opposite leaves with serrated margins.
The flower heads consist of a yellow corolla and 5 white, short ray florets. There are large gaps between the 2-3 toothed florets, so that one always stands alone.

Recipe for the kitchen: Salade Bonaparte
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 2 tsp Dijon mustard
- 3 handfuls of French herb
- Croutons
Make a vinaigrette with the oil, vinegar and mustard and pour over the cabbage, sprinkle with croutons. Ready!
In the kitchen:
The flower heads are excellent as edible decoration for dishes and buffets.
